| Beta Carotene Beta carotene belongs to a group of plant compounds called carotenoids. These are pigments that provide that provide the yellow, red and orange coloration in fruits and vegetables. BIOLOGICAL FUNCTION & EFFECT: Beta carotene is the most effective natural agent capable of quenching single oxygen-free radicals in humans. EFFECTS OF DEPLETION Deficiencies of this nutrient are associated with a vitamin A deficiency. Low dietary intake is associated with a weaker immune system. Numerous types of cancers are associated with low dietary intake of beta carotene. SOURCES Yellow and dark-green leafy vegetables (carrots, collards, spinach, sweet potatoes, squash) as well as apricots, cantaloupe, cod liver oil and halibut fish oil.
